So how to make these eclairs? I used 1 cup of water πŸ’¦, 100g of margarine, and 1 cup of cake flour. You need to bring the water πŸ’¦ to a boil and then add the margarine 🧈. Wait until the margarine has melted. Now I’m the flour using a wooden spoon πŸ₯„, quickly and the lower the heat on the stove plate. Keep on stirring the mixture which has become a little ball of dough. It’s the same process as making a white sauce.

Then add 4 eggs πŸ₯š which you have beaten, mixing these eggs in the dough mixture. You must work fast to avoid the egged cooking in the warm dough mixture. The mixture must look shiny and when you lift it up from your spoon πŸ₯„ it must hang a little before it drops of. You are ready to bake.

In a preheated oven on 180 degrees Celsius place your greased cookie tray with piped dough and bake for 40 minutes. On the bottom tray in over place a cake tine whit about 4 cubes of ice keeps the dough from drying out too much.

Remove from oven and let it cool down. In the meantime prepare your chocolate but placing cooking chocolate in a bowl with some fresh cream and cook for 30 seconds. Mix until you have a nice running mixture. Then cut open your eclairs and put in the cream and cover with melted chocolate 🍫. Yummy it’s so nice and fresh.
